Assembled by Lynnette E. Foucher, this collection consists chiefly of cookbooks produced by food companies between the 1920s-1970s. These cookbooks reflect the changing role of women in the home as well as new food trends and innovative technology. Taken together, the collection offers a glimpse into the way meal preparation changed in the U.S. during the second half of the twentieth century and how this change transformed the way we eat today.

Holden, Flora A. M.

Flora A. M. Holden Cookbook

Born in Marlboro, Mass., on July 28, 1849, Flora Ann Martin Ellithorp married Frank B. Holden of the adjacent town of Hudson on Nov. 22, 1871. The couple had three children: Marion Carlton, Fred Tracy, and Beatrice Spurr. Flora was just 35 when she died of liver cancer on May 24, 1885.

Holden’s manuscript receipt book includes recipes for a variety of baked goods and desserts, but primarily cakes and custards. Although some of the recipes may be original to her or her family, others are clearly attributed to other writers and some may have been derived from published cookbooks. Among the recipes are some of the most popular dishes of the era, including Parker House rolls, Washington pie, and Graham bread.

Horsch, Annie C.

Annie C. Horsch Cookbook

Born in Germany in 1866, Annie C. Horsch worked for many years as a servant and housekeeper in the home of the Dummer family in Rowley, Mass. Listed as a domestic in the Rowley City Directories as early as 1888, Horsch began to work for the miller Nathaniel N. Dummer (1824-1907) and his wife Elizabeth (b. 1839) prior to 1900 and was retained well into the 1940s. Horsch died of cerebral arteriosclerosis in Newburyport on Jan. 23, 1956, at the age of 89.

Scrappy and well used, the Horsch cookbook was the working reference for a domestic employed by an old Rowley family, the Dummers. The cookbook consists primarily of recipes for breads and desserts, with a slight nod to healthy eating (including Graham Bread and “Health bread”) followed by a succession of pies, cakes, and puddings. The book includes recipes for Spider Johnny Cake; lemon, raisin, various minces (mock mince, pear mine, tomato mince), sour milk, rhubarb, cranberry, coconut, pineapple, and caramel pies; and then the cakes: dark cake, French cake, fruit cake, apple sauce cake, Harrison cake, chocolate cake, ribbon cake, Bangor cake, and marble cake, among many others.

Koogler, Cora P.

Cora P. Koogler Cookbooks

Born in Dayton, Ohio, in about 1885, Cora P. Smith married the grocer James G. Koogler in November 1907. For many year they operated a store in Mad River, near Dayton, raising a son, Ralph. Ralph died in 1955 at age 77, Cora followed in 1964.

These two manuscript cookbooks include dozens of recipes for all parts of the meal, ranging from adventurous dishes such as San Francisco potatoes and cocoanut corn muffins, to the more pedestrian egg cutlets and hamburger on toast, with something of an emphasis on desserts, cakes, and cookies. Koogler cut out recipes from popular publications and promotional pieces by the food industry and pasted them into the volumes, and she inserted other pieces of ephemera as well, including newspaper clippings and a mimeographed sheet on “table manners.”

Norine Kotts and Cheryl Lewis Papers

Longtime partners in work and life, Norine Kotts and Cheryl Lewis met in San Francisco in 1980. Kotts, daughter of a law enforcement officer and a homemaker, whose family who moved frequently, was a freelance photographer; Lewis, a biracial Chicago native and daughter of a furniture maker and a schoolteacher, who grew up in Rockland County, N. Y., was an art student in the Bay Area and a lifelong cook. They moved back to the house Kotts was sharing with a group of lesbians, in Somerville, Mass., and eventually into the world of food collectives, restaurants, and hospitality. In 1982, along with two co-founders, Kotts and Lewis opened the cafe Beetle’s Lunch in Allston, a Boston neighborhood. Named “1983 Best Punk Restaurant” by Boston magazine, Beetle’s Lunch became known as a welcoming alternative community space situated at a convergence of queer and feminist politics, new concepts in art and music, and the changing food scene, with a dash of idealism, especially on the part of its young feminist founders. Relocating to Portland, Me., in 1985 Kotts and Lewis opened Café Always, playing a significant role in fostering and shaping that city’s burgeoning food culture: as Portland’s first restaurant to employ local farmers and incorporate local ingredients into the daily menu, Café Always garnered national attention. After selling the business in 1995, the couple opened Aurora Provisions, a gourmet food and wine shop with an in-store restaurant and catering service, which they ran until selling it in 2001. As consultants they continued to participate in and influence the food scene in Portland, helping to launch Portland favorite El Rayo Taqueria in 2009.

The Kotts and Lewis Papers provide glimpses into the formation and operation of several notable New England food establishments, documenting the creative, professional, and personal aspects, as well as the food itself. The collection contains menus, photographs, business plans, correspondence (including a set of letters Kotts wrote to her mother on the backs of menus), recipes and cookbooks, memorabilia, and a guest book filled with diners’ comments. Kotts and Lewis are also the subjects of a series of oral histories conducted by sociologist Janice Irvine.

The McIntosh Cookery Collection includes books, pamphlets, and ephemera relating to the history of cookery in New England. Of particular note are nearly 7,500 cookbooks prepared by community organizations from the 1880s to the present, usually for fund-raising or charitable purposes. These cookbooks were produced by a variety of organizations, including parent-teacher groups, churches and synagogues, social service agencies, private clubs, and historical societies as fund-raising projects.
These cookbooks document important aspects of the lives of families and women in the region, as well as ethnic groups and their adaptation of traditional foods to New England. The collection is focused primarily on New England, but includes cookbooks from other states for comparative purposes.

Peck Family

Peck-Sisson-White Family Papers

Perez Peck (1786-1876) and Asa Sisson (1815-1893) of the village of Anthony (Coventry), R.I., were innovative machinists and manufacturers of cotton looms. Active members of the Society of Friends, they were supporters of the antislavery struggle and sent their children to the Friends Boarding School in Providence, R.I.

Although the Peck-Sisson-White family collection spans three families and three generations, the bulk of material is concentrated on the lives of Asa Sisson and his wife Mary Ann (Peck) and their daughter Emily, who married Willis H. White, with an emphasis on their poetry and their time at the Friends Boarding School in Providence, R.I. The family also copied verse from other writers, including works from George Miller (not otherwise identified) extracting Anthony Benezet and “Remarks on encouraging slavery” and a “lamentation over New England” which touches on the execution of early Quakers in Massachusetts Bay.

A lifelong resident of Springfield, Mass., Athena Savas was a passionate collector who assembled a massive trove of cookbooks over the course of almost forty years.

The Savas Cookbook Collection contains many hundreds of commercially-produced and community cookbooks, primarily from New England. As a collector, Savas was particularly interested in ethnic and regional cookery, but she ranged widely to include corporate cookbooks and works relating to subjects such as waiting tables, home entertainment, and restaurants.

Tucker, Mary E.

The second child of attorney George J. Tucker and his first wife, Eunice, Mary E. Tucker was born in Lenox, Mass., ca.1835, and raised there with her elder brother Joseph and sisters Maria, Harriett, and Sarah. Mary died at a tragically young age on August 20, 1855. She is buried with her father and sister Maria in the town’s Church on the Hill Cemetery.

As small as the volume is, it is a complex book, consisting of two main parts, neither with certain authorship. Approximately the first third of the volume is comprised of brief notes on sermons delivered by Congregational minister Edmund K. Alden and other, 1854-1862, while the rest is a well-organized receipt book kept in a different hand. The receipts are arranged in sections devoted to bread and cake, soups, fish, meats, vegetables, pastry, puddings, other desserts, cake, preserves and jellies, miscellaneous, and pickles and sauces. Several recipes are attributed to other writers, including the well-known cookbook author Juliet Corson.

In 1993, UMass Educational Television was created by Dean Bailey Jackson and Associate Dean for Academic Affairs Jay Carey to establish a creative media outreach project for the School of Education. Professor Liane Brandon was asked to be the Director with Associate Dean Jay Carey as Co-director. Working in collaboration with staff member Scott Perry, they designed UMass Educational Television to provide the public with innovative, original, educational programming using the resources of the School of Education and the University, and to serve as a hands-on learning laboratory for students and teachers. They became the only School of Education in the country to produce original educational programming for cable/home audiences. Despite the positive reception of the programs produced, funding for the UMass Educational Television was cut and production ceased in 2003.

The UMass Educational Television Collection consists of many of the original programs they developed and created: Try This At Home, Fresh Ink, Who Knows? Pet Tales, Valley Vignettes, Hi Mom!, and Fine Print. Show flyers, posters, production files, and awards provide insight into the creation and reception of programs.
